Ground Turkey Fried Rice

This healthy dish is one of my toddler's favorite meals and he will actually sit still to eat it! This family friendly recipe is packed with protein, low in calories, and it's a great way to incorporate ground turkey instead of beef into your diet. The best part is, this dinner is super easy and super fast to make (no long hours of preparation for the tired mom!)




Ingredients:

1lbGround Turkey meat
110 ounce bag of frozen Vegetables (peas, carrots, green beans, and corn)
1large onion, chopped
2Eggs
4Green onions, chopped
4Garlic gloves, minced
3-4 tbsLite Soy Sauce
2 cups


white or brown rice, cooked

Directions:

Total Prep and cook time is about 20 MINUTES.

1)In a wok or large skillet brown the ground beef with the onions and garlic. Drain and return back to skillet.

2)Cooking on medium heat, Add the frozen vegetables. 

3)Once the vegetables are cooked, add the eggs and scramble into the meat and vegetables. Add the green onions.
4)Add the rice, soy sauce, and salt and pepper to your tasting.  Feel free to add extra soy sauce. Serve and enjoy!

Little Pow Wow Cabin Party ~


Teepees, toddlers, finger foods, feathers and a cozy cabin is the perfect setting for a Little Pow Wow party!
The idea came to me after my son had his yearly photo shoot with Little New York Photography back in May. Marzena is a brilliant photographer and a great friend who never lets us down when it comes to having the most unique and gorgeous family photos. She took us out to an enchanting meadow and after an hour of playing with teepees, dream catchers, headbands, and colorful feathers, I knew I just had to use this theme for Jaxon's birthday. 



We traveled to the Smokey Mountains in Tennessee and rented a cabin to host a party for family and friends for a fun-filled weekend.  Themed finger foods, plenty of space for boomerang throwing and a fire pit for making s'mores at night made this party fun for kids and adults!

Skinny Mexican Chicken Casserole


        





We eat a lot of pasta in my family and some days I try to find ways to substitute something a little healthier and with less carbs into those dishes. I love LOVE chicken spaghetti and I wanted to create a version that has fewer carbs, less calories, flavor with a lot more kick, and super easy for the tired after a long day at work or with the kids. 










I have been wanting to try these Shirataki noodles for a long time and decided to give them a try in my new recipe. They are made out of tofu,  gluten-free, and only have 20 calories per bag! You can't get better then that! I found them at my local Kroger store in the vegan cheese and yogurt section.  

Make sure to rinse them well after you take them out of the package and drain them. 


Combine all ingredients (except for cheese) and put them in a 9" x 13" baking dish.  Cover and Bake at 350 for 35 minutes. Add cheese and bake for another 5 minutes or until cheese is melted. 



Serve and Enjoy!!!!!!












Skinny Mexican Chicken Casserole


Made with Tofu Noodles for lower Carbs
Prep Time- 10 mins Yield- 8 servings

Ingredients:
2- packages of the Shirataki Tofu Noodles (I found mine at Kroger)
1- can of reduced fat or healthy choice Cream of Mushroom soup
2- cups of shredded chicken ( I used a Rotisserie chicken)
1- 6oz Chobani Plain Greek Yogurt (you can use any greek yogurt to replace sour cream)
1-can of Rotel Diced tomatoes with Mexican lime and Cilantro ( You can use any flavor of rotel)
1-cup of reduced fat or 2% shredded Mexican cheese


Directions

 Preheat the oven to 350. Combine all ingredients except for the cheese and place in a 9"x13" baking dish.
Bake for 35 mins. Cover with cheese and continue to bake for another 5 minutes or until cheese is completely melted. Serve and enjoy!!
