We eat a lot of pasta in my family and some days I try to find ways to substitute something a little healthier and with less carbs into those dishes. I love LOVE chicken spaghetti and I wanted to create a version that has fewer carbs, less calories, flavor with a lot more kick, and super easy for the tired after a long day at work or with the kids.
I have been wanting to try these Shirataki noodles for a long time and decided to give them a try in my new recipe. They are made out of tofu, gluten-free, and only have 20 calories per bag! You can't get better then that! I found them at my local Kroger store in the vegan cheese and yogurt section.
Make sure to rinse them well after you take them out of the package and drain them.
Combine all ingredients (except for cheese) and put them in a 9" x 13" baking dish. Cover and Bake at 350 for 35 minutes. Add cheese and bake for another 5 minutes or until cheese is melted.
Serve and Enjoy!!!!!!
Skinny Mexican Chicken Casserole
Made with Tofu Noodles for lower Carbs
Prep Time- 10 mins Yield- 8 servings
Ingredients: 2- packages of the Shirataki Tofu Noodles (I found mine at Kroger) 1- can of reduced fat or healthy choice Cream of Mushroom soup
2- cups of shredded chicken ( I used a Rotisserie chicken)
1- 6oz Chobani Plain Greek Yogurt (you can use any greek yogurt to replace sour cream)
1-can of Rotel Diced tomatoes with Mexican lime and Cilantro ( You can use any flavor of rotel)
1-cup of reduced fat or 2% shredded Mexican cheese

Bake for 35 mins. Cover with cheese and continue to bake for another 5 minutes or until cheese is completely melted. Serve and enjoy!!

This is a wonderful healthy recipe! My husband and I have been very leery of tofu but this was really good. I would so make it again. It really hit my taste for Mexican Chicken Spaghetti.
