Low Fat One Dish Cheesy BBQ Chicken~


My family loves this recipe, and I use it often because it is so simple and takes no prep work! This flavorful and low fat meal can be done on a super busy day when you don't have a lot of time and don't want to ruin your week of clean and healthy eating.  You can’t beat fast, yummy, and healthy!
This recipe for Monterey Chicken over at All Things Simple inspired this family friendly meal and I hope you enjoy my spin on it! Just throw everything in and let it cook! Add the rest at the end. Easy Breezy!




Ingredients:

4-5Chicken Breasts
16ounces of fresh green beans ( Use the canned green beans if you prefer) 
1bag of baby yellow potatoes ( use as many as you want)
1packet of Italian dressing mix
1/4 cup lite, low fat, or sugar free BBQ sauce. ( I use Kraft lite 30 calorie BBQ sauce)
1/4turkey bacon bits 
1cup of low fat cheese of your choice
1


14 ounce can of Rotel tomatoes
green onions (sliced)
pepper
butter spray ( I use Parkay)

Directions:

ZERO PREP Time!  

1)Preheat the oven to 350 degrees. Arrange chicken, green beans, and potatoes in a 9x13 dish. Sprinkle packet of Italian seasoning over the entire dish. Spray desired amount of zero calorie butter over dish. 

2)Cover with foil and cook for 1 hour.

3)Once chicken is no longer pink and the vegetables and potatoes are cooked, take out dish and top each chicken breast with BBQ sauce. Sprinkle cheese, tomatoes, turkey bacon bits, pepper,  and onions over entire dish. 
4)Place back in the oven for 5-10 minutes until cheese is melted.
