Skinny Chicken Parmesan Casserole.

Chicken Parm is one of my husband's favorite meals ... ever! When I meet him in NYC, it was the only thing he would order on dates for almost a year. It always made me laugh and every failed attempt at getting him to try something new or to find a new spot in the city that didn't serve it become just a part of our goofy friendship. It is now one of my favorite dishes as well but the weekly ordering of it slowly started showing up on my waist. I started making it at home and soon discovered that it can take half of your day to make an authentic from scratch version and it saves zero calories.  After trial and error, I found my own little version that is only 187 calories per serving and takes about 20 minutes instead of hours! Don't get me wrong, I prefer the high calorie version and will still have it on date nights, but this is perfect for a mid week healthy meal for the whole family. Enjoy!
